Tidy Fajita Cups

Hola! Well… I love fajitas. Always have. But they can be a bit risky when you’re fat fighting, so often I have to go without for long periods of time. Until, that is, I was convinced to pop into Aldi. Now. I’m not a snob, but…. I cannot abide that store. It’s disorganised and messy, and plays havoc with my brand of OCD.

HOWEVER…

They have some amazing(ly random) non-food stuff on sale.  And it just so happens that on this particular day, they had fajita sizzlers, those little keep-your-tortillas-warm things, and…. moulds to turn your wraps into bowl-type thingies. I’d seen this done before, but always thought it would be complicated… and here Aldi were offering to sell me moulds that would do the trick for me! I figured that if a normal sized wrap were to be turned into a bowl, I could fit a LOT more stuffing in there, thus cutting down on the number of wraps required (lets call them tortillas, because I’m not OK with calling a wrap a wrap if it isn’t gonna wrap anything) and thus save on fat club naughties.

Plus, it would look kinda impressive.

So here’s a nice little party centre-piece for you to try… the fajita spice blend is just my own mix of what I thought might be appropriate… it tasted pretty authentic to me.

Ingredients

2 Chicken Breasts, sliced

2 tortilla wraps

1 tsp ground cumin

1 tsp ground coriander

1 tsp smoked paprika

1 tsp chilli flakes

1/2 tsp onion salt

1 tbsp liquid smoke

1 pepper, sliced

1 onion, sliced thickly

If you bulked it out with some mexican rice, chips (or tortilla chips) then this could stretch to two as there’s so much filling… but I’m the kind of guy who would normally have four wraps anyway, so I scoffed both cups to myself…


Method

1. Mix together the spices, salt and liquid smoke, then add the sliced chicken. Coat well, and leave in the fridge, covered, to marinate for an hour or so.

2. Pop the oven on to preheat to about 170ºc (fan assisted).

3. Over a high heat, brown the chicken, and heat through until almost cooked.  I used the sizzler, but found that for these portions my little individual sizzler got a bit overcrowded.

4. When the chicken is almost done, put the wraps in the mould (if you don’t have fancy moulds they can be folded around balls of scrunched up tinfoil, or large ramekins or something like that) and then put them in the oven. They’ll need about 10 minutes, during which time you can…

5. Put the chicken aside, then fry the onions and peppers for around 5 minutes.

6. Pop the chicken back in with the veg, and cook through for the last 5 minutes.

7. Serve in the tortilla cups, both topped with some cheese and a tablespoon each of salsa, guacamole, and fromage frais (or soured cream if not fat fighting).

Tidy Savings

Wow! Well this was a close one!

ASDA win at an impressive £9.28, followed closely by Morrison at only £9.34. Tesco were only 5p behind at £9.39, with Sainsburys still in familiar last place but a meagre 5p behind Tesco with £9.44.

Only 16p between first and last really is impressive! I had to cost it without liquid smoke as none of the big four carry it… I got mine from Amazon.


Tidy Tweaks

I actually tried this two ways. The first way was as per the recipe, with sliced chicken. The second way was to marinate and cook the chicken breast whole, then slice it… but I found  that although this way was very succulent and just as tasty, it took an absolute age for the chicken to cook through.

The spice blend is just my own concoction, so feel free to alter it as you see fit. I actually forgot the chilli flakes the second time around, but it was still perfectly tasty. If you’re not a fan of a smokey taste (or you find it too difficult to get hold of) you could always leave the liquid smoke out. You may want to replace it with something different though. Olive oil could be good, meaning you don’t have to use any to cook with. You could even try the spice as a dry rub instead.

Alternatively, if spice isn’t your thing, maybe a lemon and/or lime marinade could work just as well.

I used plain tortilla wraps but really wanted to try garlic & herb ones, or something like that. There are so many possibilities here that you could have fun with!
