It was my birthday last week, and suffice to say I over-indulged. For a whole week. I’ve been very proud of my weight-loss success since joining Fat Club between Christmas & New Year, but in the space of this week, I put on half a stone! Oops!
As we’re getting closer to Summer Holiday time, here’s one to kick-start the beach body regimes! It’s very very slightly adapted from a Slimming World recipe.
I haven’t had it too many times in my life, but I seem to remember particularly enjoying rosti. I also particularly like sweet potato, and recently had a couple of baked sweet potatoes with goats cheese. They were nothing short of amazing, so I thought I’d blog them… then thought that maybe it was a little too simple for a full-on post…. so I got my thinking cap on, and decided to try a rosti version, with a few other twists!
If you’re anything like me, you’re probably feeling the effects of the Seasonal over-indulgence! I’ve mentioned a few times that one of the risks of running a food blog is that the pounds pile on! Having injured my foot in the Cardiff 10k back in September, I really haven’t been exercising as much as I should, and I’ve also been eating whatever the heck I like! Generally, for me, that involves far too much of everything, and none of it very healthy! With the added decadence of Christmas thrown into the mix, I’ve put on about half a stone in three months… eek!
So, rather than waiting for the new year to start, I signed up for Fat Club (otherwise known as Slimming World) on Monday. I thought this recipe of theirs looked great, so I’ve decided to share it with you today, as a healthy option to kick-start your resolutions!
Don’t worry, I’ll still be having cheat days, so not every post for the next few months is going to be a fat club recipe! Although if they taste as good as this, you’d never know the difference anyway!
I’ve only modified this recipe very very slightly, but I have suggested some other tweaks (as ever)!
Today, we have our first ever mystery bag challenge! Based on my friend Wayne’s suggestion, I challenged the TidyMunch Facebook community to come up with a list of ingredients, from which I would concoct a recipe; the random-number generator chose Mike with his suggestion of: Chicken wings. BBQ sauce. Honey. Soy sauce. Sweet potato. Corn on the cob. Blue cheese. Mayo (light if desired). Red cabbage. Carrot. Onion. Garlic.
So here you have: Sticky-Fingers BBQ Chicken, with Honey-glazed Corn on the Cob, Sweet Potato Fries, Blue Cheese Dip, and Home-Made Coleslaw!
And so the World Cup is over, but I couldn’t let it pass without a Brazilian recipe! At least they’ve made it to one final =/
Over the course of the competition I’ve been perfecting a light Chicken Stew (moqueca de frango) and although it’s tasty and I can thoroughly recommend it… nothing I could do made it even remotely visually appealing.
So instead, we have these wonderful little parcels of joy! They’re perfect finger food, and will go down well as nibbles when you want to impress and offer something other than chicken nuggets and sausage rolls! They’re also suitable for vegetarians, but not in an overt way that might deter hard-core carnivores!

I love sweet potato, so when I was sent this Tesco recipe, I just had to try it!
This is perfect for Barbecue weather, but can also be cooked in the oven. I had them as an accompaniment to Fiona Farley’s Greek Chicken Pitta Pockets, and found that despite the cross-quisine fusion they worked well together as an easy summer evening meal.
