Hello, Munchkins!

I’m sorry I’ve neglected you! It’s been a busy start to 2016, and it doesn’t look like letting up any time soon, but I’ve still managed a little time in the kitchen!

This particular recipe is an old favourite from my pre-fatclub days, but I tweaked it a little to be healthier. It’s still not goody-two-shoes, but it certainly works within Slimming World limits! It tastes like it shouldn’t!

Anyway, it’s taken long enough to get this far, let’s not wait any longer. Get stuck in!

Mushroom Tidy Fried Rice

Whenever I order Chinese Takeaway, I almost always have Special Fried Rice. I love all the tasty little morsels of meat that they probably just couldn’t sell in dishes of their own…. so I was a little nervous to try this vegetarian version. I mean…. what would be the point? Well it turns out, the point is just wow. Nothing else. Just wow!

The mushrooms add a little bit of a meaty texture to this fat club recipe, from Slimming World‘s Veggie Deluxe book. Suspend your disbelief, and give it a whirl!

Sergeant O’Leary’s Chicken Cacciatore

Well hello there, Munchkins!

It’s been a while, and I’ve been naughty! I’ve been eating lots of lovely food (and lots of not so lovely food) and very little of it has been healthy. Although that’s not always important at TidyMunch, my return to healthier eating has also brought me back to blogging. I’ve been super-busy (not just lazy) but now have time to both cook and write again! Yay!

Tonight’s recipe is adapted from a Fat club one again (or at least the sauce is) and I have to say it surprised me! I’ve seen a few recipes for cacciatore, and I have to say they’ve all looked quite different from one another! This one seemed pretty straight forward though, so I figured I’d chuck in some chicken, and give it a whirl!

Turkey Cannelloni

Hello, children! Are you sitting comfortably? Then we’ll begin.

Once upon a time, a long long time ago, the rulers of the fair United Kingdom (and some of their counterparts in the neighbouring kingdoms) got themselves all in a tiz over how ill some of their moocows had become. They were really worried that if the people of the land ate the moocows, then they would become ill, too.

One day, Good Mother Nell, decided that she’d feed her family something different, so that Prince Charming might grow up big and strong, and not become a mad moocow (20+ years later, the Jury’s still out!)

She travelled far, she travelled wide, in search of good nutritious meat to keep the family fighting fit and healthy, and eventually stumbled across a farm owned by a kindly old farmer and his wife. They had no children of their own to care for, and so when Good Mother Nell told them of her plight and quest, they took pity, and slaughtered one of their very own turkeys for her.

She promised one day to repay their kindness, and hurried off home to prepare a fine feast for her fair family. She ground the meat of the turkey to make a mince, which she cooked in a lovely, rich tomato sauce, a little like a bolognaise or lasagne. She used the mixture to stuff tubes of Cannelloni pasta, which she later baked in the oven with some béchamel sauce and cheese.

She presented the dish to her husband and son (and took some back to the kindly farmer-folk, because she’d promised to repay their kindness etc. etc. yada yada yada) and they were mightily impressed with the tasty tasty goodness.

After many  years went by, the moocows of the kingdom became well again, and Good Mother Nell reverted back to cooking with beef instead of turkey, but Prince Charming never forgot those days when a humble meal, made out of love and desperation, delighted him so much.

And so he decided to chronicle the details of the culinary adventure so that other families could also enjoy the tasty tasty goodness.

And they all lived happily ever after, forever and ever, amen.

Ifits Stuffed Peppers

I love couscous. I literally can’t get enough of it. It’s not always easy to find interesting ways to serve it, though, so I tend to serve it as an accompaniment to interesting dishes. When I decided it was time for another Ifits recipe, though, things quickly pointed towards the two peppers I had in the fridge, and rice seemed like too obvious a choice – so it had to be couscous!

I found this both tasty and filling, despite it’s healthy appearance! Go on, give it a try. I dare you!

Spicy Sausage & Mushroom Risotto

Today’s recipe is a fat club one from Weight Watchers, and is very much in demand amongst my friends and family! Hearty, and big on flavour, it’s one of those that you could lie about to feed hungry men who turn up their noses at “diet food!”

This is one of my favourites, as it’s so easy. Although it takes a littler longer than most of the recipes I share here, it’s definitely a go-to one for me. It lives at the “fatter” end of the “diet” spectrum, but that makes it feel like a worthy meal after a day full of exercise, and stops me “treating” myself with chocolate and naughties!

So whether you’re dieting or just plain hungry, get your cook on!
