Tidy Carbonara with Chicken Meatballs

About this time last year, I shared a recipe for Baked Meatballs with Penne in Arrabiata Sauce. It’s become one of my firm favourites, but when I was presented with some Chicken Meatballs in a recent Musclefood order, I wondered if I could do anything a bit differently.

I’d have to agree with any accusations that a lot of my recipes are on the spicy side, and I also have a tendency towards tomato-based sauces, so I thought that a  Carbonara would fit well, and might also make a nice change to the blog.

Lo and behold, Slimming World’s Little Book of Sauces contained a Carbonara sauce, so this week’s recipe is my (very similar) take on that.

Cheesy Chorizo Brunch

I am a classic yo-yo dieter. I’m either flat-out dieting, or fat-out eating aaallllllll the food.

Like almost every other 18-40 year-old with an interest in living a healthy lifestyle and maintaining a balanced diet, I bought Joe Wicks’ Lean in 15. There are lots of amazing recipes in there, but of course, I was drawn to the Chorizo ones!

Wicks uses chicken in his recipe, but I forgot to defrost some, so tweaked the recipe, slightly. I’ve also made another tweak which I’ll explain in Tidy Tweaks.

Either way, the end result is amazing…. and the bonus is, it’s quick and easy! So get stuck in!

Hello, Munchkins!

I’m sorry I’ve neglected you! It’s been a busy start to 2016, and it doesn’t look like letting up any time soon, but I’ve still managed a little time in the kitchen!

This particular recipe is an old favourite from my pre-fatclub days, but I tweaked it a little to be healthier. It’s still not goody-two-shoes, but it certainly works within Slimming World limits! It tastes like it shouldn’t!

Party (Chilli)Poppers

So you know me by now. For my Christmas Menu I wanted something a little bit different that would still tie in with Christmas themes…. It also just so happens that the Jalapeño Chilli plants I grew from the seeds I was given last Christmas have only just borne fruit…. and so I give you my Christmassy take on jalapeño poppers – I’ve replaced the more traditional cream cheese filling with Wensleydale with Cranberry, and wrapped in Turkey rashers, just so you can be sure that they’re definitely 100% bonafide Christmas food! A dollop of Cranberry Jelly adds the perfect sweetening touch to lighten the fire of the chillies 😀

Super-Cheesy Durty Eggy Bread

IMGP3128Yes! Dirty with a “u” because these are sooooo bad they’re good. There’s nothing refined or elegant about this week’s recipe. It’s an oldie I’ve been holding on to for quite some time… before I rejoined fat club!

It’s not pretty to look at, but it sure tastes good! It reminds me of being a kid, when the mothership once amazed me by putting cheese (yes, cheese!) inside eggy bread. Or French Toast as we called it.

I remember her telling me that her dad had used to make it for (maybe with) her, and so it seemed somewhat fitting for Father’s Day.

No matter what day it is, this is quick, tasty, and deeeeelicious!

Chips, Cheese, & Curry Sauce

Time for a Tidy Flashback Fakeaway!

Everybody has a guilty pleasure: your go-to snack on the way home from a ridiculously messy night out. For some it’s a Kebab, others crave a slice or two of pizza. Chips are pretty universal, and I was always a fan of Chips & Cheese.

Then, when I moved to Dundee for Uni, some friends had a thing for Chips & Curry Sauce. One drunken night after the Student Union (More than likely a  Mono night) the two were somehow combined, and most nights thereafter it became Chips, Cheese, & Curry Sauce!

Well… the other night, I was craving Chinese, and got myself in a bit of a spiral about wanting to continue with my weight loss but also really really wanting a good Chinese curry! So I googled a recipe for Chinese style curry sauce, and had it with some rice. It was pretty good, but as I was eating it I had a flashback to those chips, cheese, and curry sauce nights. The sauce would’ve been too hot to be authentic, so I made some tweaks and came up with this! The colour’s a little on the dark side, but I’ve made it mild enough to taste pretty close to the mark!

So, if you were ever in that queue at Istanbul on the Nethergate, waiting for your post-Mono munch…. this one’s for you!

Tidy Fajita Cups

Hola! Well… I love fajitas. Always have. But they can be a bit risky when you’re fat fighting, so often I have to go without for long periods of time. Until, that is, I was convinced to pop into Aldi. Now. I’m not a snob, but…. I cannot abide that store. It’s disorganised and messy, and plays havoc with my brand of OCD.

HOWEVER…

They have some amazing(ly random) non-food stuff on sale.  And it just so happens that on this particular day, they had fajita sizzlers, those little keep-your-tortillas-warm things, and…. moulds to turn your wraps into bowl-type thingies. I’d seen this done before, but always thought it would be complicated… and here Aldi were offering to sell me moulds that would do the trick for me! I figured that if a normal sized wrap were to be turned into a bowl, I could fit a LOT more stuffing in there, thus cutting down on the number of wraps required (lets call them tortillas, because I’m not OK with calling a wrap a wrap if it isn’t gonna wrap anything) and thus save on fat club naughties.

Plus, it would look kinda impressive.

So here’s a nice little party centre-piece for you to try… the fajita spice blend is just my own mix of what I thought might be appropriate… it tasted pretty authentic to me.

This is a real quickie this week! The plan was to blog something more substantial… but I had four eggs that needed to be used before shopping arrived and I figured an Ifits was overdue anyway!

Sweet Potato Rosti with Goats cheese & Caramelised Red Onion

I haven’t had it too many times in my life, but I seem to remember particularly enjoying rosti. I also particularly like sweet potato, and recently had a couple of baked sweet potatoes with goats cheese. They were nothing short of amazing, so I thought I’d blog them… then thought that maybe it was a little too simple for a full-on post…. so I got my thinking cap on, and decided to try a rosti version, with a few other twists!
