Well it may be a little soon for another fits, but the truth of the matter is I had a week away, and when I came back I couldn’t be bothered shopping! And isn’t that the whole point of Ifits recipes?
This one is a bit on the spicy side, and may not exactly contain ingredients that everybody has lying around… but you know, when you write a food blog, you tend to pick up a few interesting bits and pieces….
2 chicken breasts, cubed
1 pepper, diced
150g rice (I used basmati)
300ml boiling chicken stock
2 tsp chipotle paste
A good squeeze of tomato puree
1 tsp smoked paprika
1 tsp cayenne pepper
This could probably serve two, but I had it all to myself!
1. Pop the oven on to pre-heat to 180ºc
2. Brown the chicken in a frying pan. I used garlic Frylight, but any oil will do.
3. Chuck in the chipotle paste, and six or seven squeezes of the liquid smoke, along with a good sprinkle of the chilli flakes.
4. Add the diced pepper, and keep everything on the move for about 5 minutes.
5. Meanwhile, add the tomato puree, paprika & cayenne pepper to the chicken stock.
6. Fry the rice with the chicken mixture for a few minutes, then transfer it all to roasting dish, before adding the stock, and giving it all a good stir.
7. Pop it in the oven for about half an hour, and you’re done!
The whole idea of Ifits recipes is that they shouldn’t cost you anything… however… if you were to buy these ingredients, then the costings would work out pretty closely!
ASDA did best, with a thrifty £10.61, followed most surprisingly by Sainsbury’s at £11.10. It’s great to see them actually in the running, for a change! Great prices on their chicken made the difference, this week.
There was only a penny between Tesco & Morrisons, coming in at £11.77 and £11.78 respectively.
As with all Ifits, it depends what you’ve got in your cupboards. I was hoping I’d find some sweetcorn, and even toyed with the idea of baking an egg in the middle.. decided against that one, though!
Some prawns could work in this, though the chances of me ever having those left-over are pretty slim. Nice bit of bacon maybe though, and of course you can switch the meat for any other one (or leave it out completely). I quite like the idea of cooking sausages in the rice, but that’s a bit too close to the Spicy Sausage & Mushroom Risotto to blog again!
You could do this without the tomato puree, but I wanted that extra richness. I could’ve added a dash or two of worcestershire sauce as well for a bit of extra depth.
The Chipotle paste made this quite hot – which is good, I wanted heat. But it’s not something that’s always lying around… I did have some Hot Pepper sauce in the cupboard that I considered using instead.
I’d love to see what you guys create for Ifits meals! I believe Mother Dearest made a stunning Ifits stir-fry the other day that included Okra, but I’m yet to see photographic evidence!
