Greek Chicken Pitta Pockets

Today’s recipe is courtesy of Fiona Farley, one of our most active twitter followers & Facebook friends.

They’re perfect Summer food, and will bring a little sunshine to your day even when the weather doesn’t match!

I served them with Cajun Sweet Potato Chips, but Fiona recommends a nice, fresh greek Salad – can’t fault that plan!


Ingredients

Juice of 2 medium limes

1 tsp ground corriander

1 tsp ground cumin

1/2 tsp tumeric

1 pinch salt

1 tbsp fresh, chopped mint

4 medium chicken breasts

1 small pot, 0% fat greek yogurt

170g reduced fat Houmous

4 medium wholemeal pittas

 

This is enough for four servings… me being me, I halved it… and ate it for one!


Method

1. In a bowl, blend together the lime juice, coriander, cumin, turmeric, salt & mint.

2. Cut the chicken into thin strips

3, Add the chicken to the spice and lime-juice mixture. Mix well to coat the chicken, cover and leave to marinate in the fridge for at least 30 minutes, stirring occasionally. If you find that the turmeric has stained your fingers, rub them with the inside of one of the used lime-skins and some fresh mint. I have no idea if this lifts the stains, but you’ll smell fabulous!

4. Mix together the yogurt and houmous, cover and chill until required.

5. Heat some oil in a large frying pan and cook the chicken for 8-10 minutes, stirring occasionally until golden.

6. Toast the pitta breads on each side under a pre-heated hot grill until golden brown or lightly brown in a toaster.

7. Cut the pitta breads in half then open each half, ready to be stuffed.

8. Line the pitta halves with the houmous mixture then fill with the chicken

Tidy Savings

Asda are miles ahead, largely due to their competitive pricing on herbs & spices. They come in at an amazing £8.85, compared to Tesco’s offering at £10.40, Morrisons at £10.54, and Sainsbury’s at £10.96


Tidy Tweaks

Obviously you can stuff a pitta with anything, but tweaks more in-keeping with the general theme would be to “vegetise” the recipe by using vegetables or Quorn. You could also do without the spices if you wanted something a bit plainer, or for a light summery feel maybe use a tzatziki type dressing, although to be fair the greek yogurt really lifts the homous anyway and I prefer it this way!

As I mentioned before, Fiona recommends serving with a light salad, and I think that’s absolutely spot-on for a light summer evening meal!
